GREEN BEAN PATE

Ingredients:
½ pound fresh green beans ends trimmed
3 large onions peeled and sliced
1/4 cup vegetable broth
3 hard-cooked egg whites
1 cup walnut or pecan pieces
½ teaspoon salt or to taste
½ teaspoon coarsely-ground black pepper
Assorted crackers
Directions:
In a large saucepan over medium-high heat, cook green beans in water for 12 minutes. Remove
from heat and drain. In a medium frying pan over medium heat, sauté onions in vegetable broth
30 minutes or until onions are well done, stirring frequently. Remove from heat.
In a food processor, place green beans, onions, hard-cooked eggs whites, walnuts or pecans, salt
and pepper; whirl until a pate-like consistency is reached. Transfer into a serving bowl and serve
with assorted crackers. [I also served with celery & carrot sticks]
Yields 2 cups.

Olive Nut Spread

Olive Nut Spread

Ingredients:
3 oz. cream cheese, softened (can be light cream cheese)
½ cup mayonnaise (also can be lowfat)
½ cup chopped pecans or walnuts
1 cup chopped green olives
1-2 T olive juice

Directions:

Cream together all the ingredients.
Serve as a dip or sandwich spread.

CHIPPED BEEF DIP

CHIPPED BEEF DIP

Ingredients:

8 oz. sour cream
16 oz. cream cheese
½ C chopped green bell pepper
½ C chopped onion
1 tsp. garlic
2 pkg. chipped beef chopped

Bag Fritos scoops

Directions:

Mix. Bake at 350°  for 15 to 20 minutes

Serve warm, and scoop with Fritos
