Crab Cakes for Two

Ingredients:

1 Small Can Crabmeat
4 Saltine Crackers, Crushed
1 Egg
1Tbl Butter (melted)
1/2 tsp  Bay Spice
1/8 tsp cayenne
1 Tbl mayonnaise
½ Tbl Fresh Parsley
½ Tbl Green Onion, Chopped
S & P to taste

optional: dredge in panko before you saute the cakes

Directions:
Mix all the ingredients. Shape into patties and hold in the frig. for 30 minutes to a hour.  Saute in hot butter until golden on both sides.

Serves about 2
